Recovering deleted folders from Deleted Items in Outlook 2003

I’m hoping someone here can provide some guidance re: recovering deleted e-mails from Outlook 2003.

My company recently let someone go, and evidently shortly before that happened this person deleted a large number of e-mail folders from her Inbox.

Now when I access her mailbox via Outlook (2003) I see numerous mail folders listed in her Deleted Items folder, but all of them are empty even though each folder should contain lots of messages.

I’ve tried the “recover deleted items” procedure for the top-level Deleted Items folder, but as expected, that just brought back the stuff from when the Deleted Items folder was last emptied, which isn’t useful to me. After the recover deleted items process, the aforementioned deleted folders are still there, and still empty. Recover Deleted Items is not an available option when I select any of the deleted subfolders.

What are my options to find and recover the contents of the deleted folders?  I’ve got Exchange 2010 with a configured retention time of 30 days, presumably I should be able to recover the messages from the live mailbox and not have to resort to restoring a backup and extracting and earlier version of her mailbox.
